    You do realize that the entire purpose of pickling eggs is so they can be stored for long periods of time… UNREFRIGERATED. It has been done for HUNDREDS OF YEARS. The reason the gov't tells us "it is unsafe" is to cut down on the number of people being self sufficient, and thus independent. Properly pickled eggs last for months or even years on the shelf. One thing to avoid is puncturing the cooked egg with a toothpick prior to pickling as this can introduce Clostridium bacteria into the interior of the egg. (From Wikipedia: Clostridium is a genus of Gram-positive bacteria. This genus includes several significant human pathogens, including the causative agents of botulism and tetanus. )

    I use onions , pickling spices , a Lil habenero, garlic & organic horseradish!
