We have had bone in legs and thighs on sale for 99c lb for over 2 weeks. Really have taken advantage of that. I save the bones, skin and any fat removed to boil for broth. I just put them in the freezer until I have onion peices, carrot pieces and celery trimmings to boil. I wish my hubby would eat the boil in bag rice. Love your budget meals.

Last night I made mushroom and onion fettuccine for my dinner. It was super good and inexpensive since I had everything on hand already. All of my sonβs teenage friends loved it too, even the iffy on mushroom ones
I am a fan of Thai peanut sauce dishes where one can cut the chicken down some because it has double proteins with the peanut butter. I make a noodle one and a cabbage one and have even combined the two.
Like the chicken fried rice with adding egg(s), also a double protein with chicken and egg. Now that egg prices have come down that one is more viable again.
And of course with either thing a variety of almost any veg will work.
Meals that feature a full piece of protein per person are the least economical generally but something most would like to be able to have once in awhile so good choices and variety in that two used cut up chicken and one dish was a full serving per person and one was rice, one was noodles, etc.
Great meal ideas! If you have an Instant Pot, Iβd encourage you to use it to cook rice to make cooking rice so very easy. I just use a 1:1.25 ratio rice to water and the rice button. Wait 15 minutes before releasing pressure. Turns out perfectly every time. It was a game changer for me and itβs as easy as boil in the bag rice. The IP is the only way I cook pasta now too. Break long pastas in half and criss cross it in layers. Cover with water by about an inch above. Add salt. Cut pkg cook time in half and subtract 1 more minute. Quick release when done.

For various reasons I only have to cook my husband about 3 meals a week. I could honestly do this every single week and he'd be happy. It would not serve his low carbs thing but he'd be happy

I learned a cool trick last year⦠Use an empty spice bottle to sprinkle your flour or corn starch on chicken. Less waste and less mess!
