    I love mushrooms, I can eat them daily! Have to try the your lentil meatballs/ meatloaf, both look delicious. Hard pass on the beets, have not had any beets YET that taste good to me. I like to fry my mushrooms, with some fried tofu, for me it's a delicious movie night snack!

    I love to roast a giant pan of root vegetables and other veg in the oven. I use sweet potatoes, beets, red onions, carrots, radishes, cauliflowers, broccoli, and even sweet peppers if I have them. Makes for a delicious and flavorful addition to so many meals.
