What can you use as an alternative to a tofu press? Can you just pour it into a glass dish and refrigerate?

Hi, For fun, I tried it with only 2x as much water as seeds -and didn't separate the pulp -and added 1/2 teaspoon gypsum….a bit crumbly but good…and barely any liquid when finished…
can you use the pumpkin whey to coagulate other plant based tofu? Like chickpea, or other tofu alternatives?
