Hi Niki. This looks wonderful. Are you no longer buying Rose Acre egg white powder? I still am using the bucket I purchased. Thank you for all the great recipes!

Nili, I have discovered the best sub for potatoes is jicama. We slice it into strips, boil it for about an hour, lay it out to dry in the fridge uncovered for a day or two, and then fry it (we use an air fryer, but it's better in oil/fat). I'm guessing if one left it in chunks and boiled it and then shredded it, it would make a good hash brown. I've cubed it and fried it as a potato sub with sausage and eggs in an omelet.

Wow! I tried this recipe with some modifications. When the radish was shredded, there was liquid in the bottom. I strained and pressed the moisture out. I used a little shredded mozzarella cheese and xanthan gum and WOW. I am going to try to grate the radishs finer the next time and make potato like pancakes. Thanks😘

Yum! This looks so much easier than making nests and baking eggs! However, I like it when I haven't created items to use up when making a dish. Do you think we could use the liquid whites (from the yolks needed for the sauce) instead of egg white powder and HWC as both binder and liquid? I presume the amount of other powdered/ground ingredient such as pork panko or chicken flour (or even powdered parmesan cheese) would need to be increased.

Has anyone else seen that Amazon lowered the price of the Now Brand 5 lb egg white protein by 49% recently? From $76.79 down to $39.40. Not sure why they lowered it, but I just ordered some. Good time to stock up.
