Wow, this looks great! I agree with you about cooking in a pressure cooker. Fissler (made in Germany) pressure cookers are stove top. I bought them as part of my preparedness, in case the power goes out, I can still pressure cook. These pressure cookers reach 240 degrees so I can also pressure can in them. I spent a crap load of $$ on them but they are worth every $ I spent. If the power goes out for an extended period of time I will be canning everything in my freezer like a crazy person, lol. Oh, BTW, I cook my turkey In my Presto 23qt canner and then brown in the oven. Takes about 45 mins. to an hour for a 12-13 lb turkey. Soooo moist and very delish.
I will be trying these for sure, but a different flavor. If I were to mix all but the MCT powder and cinnamon, split the batter, then add different MCT to each, would that work? I'm not a big cinnamon fan, but Brian is………lol

I suggest making them in a quart-size jar. That is the perfect portion for this cheesecake for me.
Do you use the same sealing ring? I read that you should have one sealing ring for savory and one for cheesecakes. Never was sure how true that was. Looks yummy!
