    Burnt Basque Cheesecake, (see Food Wishes recipe) can easily be adapted to keto and can also be made lighter using some Greek yogurt instead of only cream cheese. A delicious taste sensation and party pleaser!

    Years ago, I would make a Potatoes & Egg Omlette for a family weeknight dinner.. My youngest son called it 'Potato Pizza' because he lightly spread ketchup on top of it. It includes chopped onion & one medium potato per person, diced. (Alternatively, you can use a bag of homefries sold at the supermarket.) I usually used two eggs per person. I started cooking the potatoes first to soften, removed them & then cooked the onion until soft. Once onions were softened, I put potatoes back in pan continuing to cook until lightly browned. Adding a clove of minced garlic & cooking until fragrant prior to adding the whisked eggs to the pan. I cooked the egg mixture until it set 2/3 of the way up. I then put it under the broiler until the top was cooked & LIGHTLY browned. Leftovers can be reheated & made into sandwiches.

    I like to make French Baked Eggs. I got the idea from Paula on Low Carb Revelation. Very easy to make. I also eat a lot of deviled eggs. Yesterday I made Cobb Salad Deviled Eggs. I got the recipe from David Venerable on QVC. I just didn’t add the blue cheese.

    Scotch eggs (meat wrapped hard boiled eggs). You are supposed to be able to preserve unwashed raw eggs in lime water. Since you have eggs coming out your ears, might be worth trying.
