    I feel it’s my civic duty to warn others here lol, I attempted to make some lemon and white chocolate truffles this morning using the Lily’s white chips…I ended up with about 9 decent looking ones out of 20+ and it 100% was not worth the dumpster fire mess it took to get that decent 9 – the chips melted beautifully briefly lol then separated into a semi waxy lump with a buttery puddle underneath, I had to roll each ball multiple times on paper towels to remove the leaking greasy liquid, it also seizes up incredibly fast even when kept warm for dipping. Maybe it was me, but I would recommend avoiding the white ones (they also taste weird compared to the chocolate ones in my opinion).

    The ChocZero chips are my favorite, by far~ they quickly bumped out every other brand. I'm now making my own white/milk/dark/flavored chocolate for baking & recipes ~ & there is no way I will ever go back to buying them =) I was intimidated by it at first, but it's truly so easy~ not to mention, far less expensive.

    Thanks for opening my eyes to the Lily's chocolate chips! After the holidays I'll get a bag of them and try them along with the monkfruit and erythritol sweetener to my normal chocolate chip cookie recipe! Speaking of freezing things, I made another batch of dates and froze them. They've frozen well! I just nuke them for 20 seconds and they're amazing again! Thanks for that recipe too!     Generics are often just as good as name brand products. It's ok to experiment, and try to save money; I think the cook shouldn't experiment with unknown brands when it's important to provide the highest quality.

    It’s so funny because at thanksgiving I wanted to experiment by making a fudge out of Lily’s chocolate and literally made it just like your filling with the addition of some butter in the cream. I just put it in a pan and cut in squares and it turned out great!! Now I need to try these truffles and impress my family!

    All kinds of possibilities.. matcha is good for keto so white chocolate matcha .. matcha works with chocolate in general. …. especially dark chocolate.

    I could see a blueberry on top or a sliced almond or I'd even try caramel extract or almond extract or such.

    I see lots of possibilities with these also. You could roll the filling around a nut of some kind, or a piece of non keto dried fruit, or coconut, etc. Some are even using dried sugar free cranberries. Your imagination could go wild in making these. I love giving gifts all year round so this would be a lovely way to do that. Thank you for sharing.
