    For my Asian inspired cucumber salad…I’m not coordinated enough to use chopsticks so I dice or grate my veggies. It makes it easier to eat them with a spoon.

    I use 1 cucumber, 1 carrot, 1 cup cabbage, ½ of a red bell pepper, ½ of an onion, and a couple of green onions. For my sauce I mix together 1 Tbsp light soy sauce, 1 Tbsp rice vinegar, 1½ tsp gochujang (Korean chili paste), A pinch of salt, 1 tsp sugar, 1½ tsp gochugaru (Korean red pepper flakes), 2 garlic cloves, pressed and 1 tsp sesame oil. I toss the veggies in the sauce until everything is well coated. Put a lid on the bowl and place n the fridge to marinate for a while. Serve cold and keep in the fridge, but for no longer than a week.

    I've done those skewers before, but with a little zucchini added to the mix. The other thing I did (since, as Steven said, I was entertaining), was soak the skewers in bourbon. Slightly quicker to cook (since alcohol burns) and left a nice oakey flavor behind. Then I lost my grill, but got a griddle instead. It works the same way, for those of you that have a griddle. You just have to be absolutely sure to turn them, or they'll burn on one side, and no one wants that.

    Thank you for sharing summer recipes. It's going to be between 105F and 111F all of next week (July 3-11) here in the San Joaquin Valley of California. It's drier heat than you all get in SC but hot is hot. Feels like walking into a hot oven. It's too hot for children to play outside, so they play early and late. All you hear in the afternoon is the hum of the A/C condensers. No one is outside . . . the asphalt on the street gets tacky. I merely endure summer and am wishing autumn would arrive soon . . . bet you are a bit or more too. Thanks for sharing!

    I am giggling listening to you talk about how hot 94 degrees is. Here in Southern Nevada 94 degrees this time of year is a cool snap. Right now it is between 110 – 117 degrees. Of course we don’t have your humidity. I just love my Mandy in the Making time with you and Steven.

    Have you tried FlatIron pepper flakes? Has a combination of peppers like ghost, habanero, jalapeño and it only takes a little to set your mouth on fire. Love your videos and am watching from Fort Worth Texas❤😊

    I’m from Wisconsin so I know cold and snow! It’s part of the reason I moved here so long ago!
