Genuine question …. do Americans just use actual food as a sort of accompaniment to dairy? The amount of cheese/butter/cream/milk used in these recipes is staggering.
I'd have used a good chicken stock for this, and a lot more fresh herbs, plus plenty of fresh garlic. The cheesy top would have been a light sprinkling of a high grade grana padano or parmigiana.

This woman is bringing a calming peace to some person tonight that has to make dinner, but has no inspiration and no time. No one is saying that people should eat this meal every night. She uses fresh vegetables, dried pasta (which will hold up to this casserole). She uses meat, but you don't have to. You can swap vegetables, swap cheeses, use skim…whatever. You can also keep these things to yourself. I'm so sick of self anointed michelin chefs bleating on about their superiority in the kitchen. Some of us are better in the bedroom, but I digress. But now she's in a foster home because her father became an alcoholic and she and her siblings, in other foster homes, of course, hadn't been in school and haven't been eating much of anything or even seeing each other since then. Here's a really good suggestion. Saute your onions and peppers before you add to any of your savory dishes it brings out so much flavor .
