    I finally got my hands on some dan o's original, couldn't wait to try it because of all the hype. I put it in my mashed potatoes and on my chicken and it was vile. It completely ruined my food, so I decided to taste the seasoning on it's own just to make sure that's what it was, and yep, it had a horrible bitter taste just like my dinner. I guess that's on me for trusting some over hyped tiktok/youtube seasoning, but it seems like I'll just stick to my classic salt pepper garlic.

    Pork neck and shank bones water onion garlic carrots, maybe a couple dashes fish sauce salt and pepper and a couple bay leaves. Cook for about two hours inthat I instantpot remove bones, strain out veggies or leave em. Pork stock

    They don’t sell commercial pork stock and broth for a few reasons. Mostly because pork scraps still contain too much fat such that when boiled the fat emulsifies with the bone marrow and becomes sort of gelatinous, and even when that’s scraped off the broth can have sort of a slimy mouth-feel. And probably partially because of that, Western cultures don’t have much of a taste for pork-based soups, so there’s not much a market for it, making it much more profitable to use pig scraps for things like sausages, gelatins, hot dogs, etc; whereas the inverse of that is true for beef and especially chicken, far less a market for sausages and such made of those, but tons of traditional meals using broth from the same.

    Years ago when I did the cooking thing in fine dining/above average restaurants, we usually mixed beef and chicken stock 40/60ish depending on the strength of the beef and chicken stocks on the stove. Pretty much did the same for veal stock. Pork bones aren't something I saw available on price lists from purveyors either like beef and veal bones.
