    I’ve been making a recipe from Hillbilly Housewife for Taco Style Lentils and Rice for many years. It is delicious, made from pantry staples, and can be cooked on the stove, crock pot, intantpot, and probably even in a rice cooker.

    I love spicy coconut lentil and vegetables soup. You can use green or brown lentils if you want them firmer or red or orange not sure color if you want it muchy or creamy.

    Well I guess it's confession time again. I'm not a big fan of lentils. To me, they taste too peppery, like black pepper and I'm not a big fan of black pepper. Long story and my brother wonders if we're related. 😏 But one of my nephews has a recipe for lentil soup he got from a restaurant that was really good. I've thought about trying that recipe.
    But on another note, I was at a DT Plus today and found some of the plant based meals. Sadly I was at the eye doctor earlier and had my eyes dilated so by the time I arrived at DT I couldn't see much of anything. So I stopped at DT to kill some time and try to focus again before my 30 mile trip home. So I asked another customer to tell me what kind it was. It was Hawaiian something, pineapple and brown rice so I got it to try. I also picked up some quinoa. So I'm expanding my horizons. 😋
    And if you think about it, I'm expanding in your direction because I'm trying a lot of things that you use and show us recipes for. So I'm slowly getting there. 😁
