I had the huevos rancheros for breakfast this morning. Flavors that I love, but for some reason don’t associate with breakfast. Probably imprinted from my southern upbringing. Sooo good! But sooooo filling. I used regular corn tortillas, probably more beans than I needed….make that definitely more beans than I needed (0pp for me). Definitely will have again, but might use the street taco shells instead. That might encourage me to use less beans. LOL. Thanks for the inspiration!
