There’s a restaurant I love called Mini Mango (Edmonton, AB). They do a whole spring roll in the salad roll, and I always get it with shredded mango too, and they are the BEST THING EVER!!!! My mom lives on the other side of the city, and if she’s over at my place, always requests that we order the salad rolls.
