    High Protein Mocha Coffee Mousse

    Makes 4 Servings

    2 Cups Egg Whites (I use Bob Evans or Kirkland Brand)

    12oz cold black coffee

    1 packet or scoop Mocha Keto Chow (or your favorite chocolate protein powder)

    1 tsp beef gelatin (I use Zint Brand)

    2 tsp Liquid Stevia (or liquid monk fruit)

    2 tsp powdered cocoa

    1 tsp vanilla

    Instructions:

    In a heated good nonstick pan heat the egg whites on medium low stirring to keep from sticking or turning color. You want them cooked but moist

    In a high-speed blender add the coffee, stevia, and vanilla and blend

    Add the Mocha Keto Chow or protein powder and Gelatin and blend

    Once the egg whites are cooked but still moist add them into the blender and blend on high. Stop to scrape the sides then continue to blend until totally smooth and creamy texture.

    Pour into a container, cover and refrigerate for at least 3 hours or overnight for best texture and flavor.

    Macros Per Serving: 109 Calories/ 3g Carbs/ 0g Fat/ 21g Protein

    I've been taking products for adrenal support which also will help lower cortisol.

    I've used AOR Ortho Adapt and CanPrev Adrenal Pro they're really helpful. Since my stomach cannot tolerate coffee at all which does a major job on the adrenals therefore causing more cortisol to be made I've stopped coffee and now only drink tea, either chai tea or matcha tea.

    Also have been reading a book called Super Powered Empath it talks about emotions and mental stress where your amygdala and insular cortex in your brain cause a flood of cortisol and adrenalin. Meditation has been really helpful for that for me. Insight Timer – great website and app! Take care you two. Sending my love!

    I have a degree in nutrition. Took 4 years. Never took the test for certified dietitian because I needed a 6 month internship and just couldn’t afford it! I did work in a hospital as an assistant dietitian. For the most part people have no clue about food and nutrition. So much misinformation, especially when it comes to inflammation. Your nursing degree should help because you need all kinds of science courses, biology, chemistry, anatomy and physiology. Then all the nutrition courses! But it is interesting and ever changing.     I use Pharma GABA for its calming properties, i find it really helpful in quieting/calming my thoughts and for better sleep. Maybe another option worth looking into.

    This is the first time I started the challenge from the first day. I'm so 😁. I gained some weight living up here in the frozen tundra trying to recoup from a total knee replacement. Now I need to lose some weight so I can have my left knee done at the end of June. So 😊 that you two are so dedicated to us that you do all you do. Thank you!

    I wish you much luck in the studies you are pursuing. At least in the area I’m in, students and certified nutritionists are not allowed to be pro keto. They have to tow the corporate line. I hope by the time you are finished with your training and certification that has changed.

    Wendy, congrats on your decision to obtain a certification. I think it's great to work from a plan. I've considered this myself but still have not started. I'm curious as to what you selected so if it's not a secret, I for one would like to know. I understand if you'd like to keep quiet on it for awhile.

    I have been using CALM for about 6 months now. It helps me relax in the evening, it helps with my restless legs, and it help keep the dam from backing up! It is wonderful!

    I love your passion! You will do great with teaching others. I am so glad to make the pudding with cooked egg whites, a lot less work than boiling eggs. I am doing 18 hours. Great challenge this month. I am happy to have chicken.

    Wondering whether you ever have insulin levels checked, because sometimes sweet tasting things can cause an insulin response even when they are not considered as sugars that our bodies process. Stress certainly can contribute, and you two are so careful and diligent to stay on track that it is hard to understand what is going on sometimes.
