Not sure if it’s available there, but here in Australia we have frozen diced onions in a bag – I haven’t cut and cooked with ‘fresh’ onions for 30 years lol 😁🤣.
Have you ever tried microwaving corn? You don’t take the green off, just cut the end and microwave for 5-6 minutes, then “squeeze” the corn out of the husk. So good and easy!

Loved watching you cook! Brought back a lot of memories of when I started cooking more for my family years ago. I wasn't a very experienced cook either. Just a couple meals under my belt at the time. Took me years to overcome my fear of learning how to use the crock pot. I don't plan to learn the instant pot 😅. Your recipes look delicious! I'll have to give a few a try. It's fun to watch other people's style of cooking. I'm quite similar to you on how I add seasonings and different ingredients. Learned a few new tricks from you. Especially chopping up the onion and the meatloaf recipe! By the way, love adding cream cheese to recipes. In case you haven't heard of it before, look up the Angel Chicken recipe. I believe the one I use is for the slow cooker. That is so good! I made it so often that I tweaked the recipe. Loved watching Dan enjoy the soup and help shuck the corn. 🌽 He is absolutely adorable!
