    TM, I'm so glad you mentioned hummus sandwiches! That's something we've never thought of making. I'll be using the Aldi roasted red pepper version for now, since it tastes similar to pimento cheese spread (something I dearly love, but can't eat.) I can't wait to see hummus or any other chickpea recipes y'all create in the future!

    After trying several hummus recipes, I finally settled on this one. It’s basic, but you can use it as a base for many variations.
    1 lb chickpeas, pressure cooked & drained

    1/3 c olive oil
    3 Tbsp lemon juice
    3/4 c water
    3 cloves garlic
    1/2 Tbsp salt
    1 tsp cumin
    Pinch cayenne
    1/2 c tahini
    Blend in food processor until smooth & creamy. Enjoy!!!

    Hi Texas Mom you can also use you veggies scraps. I put mine in the freezer in a Ziploc bag and when it's all full I make the broth! Good way to make something from almost nothing. Enjoyed your video!
