    Smokes poutine is not good poutine at ALL…. Whoever said that has no idea what they're talking about lmfao. Smokes is soggy, bad watery veggie gravy, just not good…

    All the components are important- good potatoes, fried well, good cheese curds, good gravy. The Holy Trinity. It's surprisingly rare to find all three at the same level.
    For a commercial chain example, also try the basic poutine at New York Fries. It's not bad. Their gravy is a rich, dark one, the last time I had it. I don't know if pandemic or inflation related deteriorating has hit their supply or methods the way it seems to have hit others this year.
    Poutine with Indian toppings or BBQ or fifty other toppings are fun, but the basic fry, cheese curd, gravy is the only real thing. All judgments should be based on it.
