    When I was a child I wasn’t fed “kid friendly” meals. I ate seaweed soup, rice, kimchi, japchai, menudo, enchiladas, tamales..etc. while the white kids ate French fries, corn dogs, chicken nuggets, spaghetti and burgers. If I didn’t like my food, too bad. This is what I had to eat for dinner because my family was on a fixed income. I’m pretty sure Nisha had a similar upbringing. She was served Indian food and if she didn’t like it. Too bad. I brought my lunches to work and heard white girls and boys say “ewww that’s gross” I’m pretty sure Nisha had a similar experience. ❤

    My whole YouTube channel is overloaded with sooooo many IP meals! It is just way too easy, and has been a huge part of our family of 4 being able to maintain a WFPB way of eating for the past 14 years.

    Jeremy! I’ve been watching your content for a few months now and I love your enthusiasm for eating vegan/ plant based and how fun your family is! A big hello from Kansas! I was watching along and I just so happen to be making peanut stew as well! I do it in the crockpot on high for 3-4 hours or low for 7ish and it is wonderful as well. Thanks for all your work 😊

    I love this book and have been cooking from it for a few years. I have a few favorites I make frequently, like the braised cabbage, Mexican beans, shepherd’s pie, Tex mex brown rice and lentils, and the ratatouille. Others I really like but don’t make often—baked beans on toast, pho, sweet potato bread pudding. I do think some of the recipes are quite complex—so many ingredients! So sometimes I modify the ingredients but mostly I save this book when I have more time.

    Your pumpkin spice oatmeal gave me an idea. Make it a baked oatmeal pumpkin special. I’ve made it with apples and bananas before, but that was decades ago. With your topping, you’d get a yummy dish!
    BTY. I’m new here. Do you have a cookbook or recommendations? My goal is living good with full cognition into my 90s. Hope it’s not too late. I’m 69 this month.

    Hello from Friendship WI 👋 I make the red lentil almond curry, spiced lentil, kale and sausage soup and chana masala throughout the fall and winter. I sub out stuff all the time as I live in a food desert 😭I stay away from the complicated dishes as I’m the only vegan in my household 🤷‍♀️I loved seeing your take on the recipes you made🥰

    The Oreo dessert: you need a high speed blender to get those cashews smooth. And perhaps a can of coconut milk, using only the solid part. No gluten free oreos in Germany, where I am.

    Great video!! Love Nisha and Rainbow Plant Life. But she does use a lot of fat/oil and Indian spices which sometimes are hard to find. I love her Lentil Shephard's pie recipe and I have adjusted it and make the lentils in the IP(take out the oil and use less water/broth) and the potato cauliflower topping in my other IP and then combine them and broil to brown the top, delish!!!

    Great video. My husband and I live nomadically in our motorhome and don’t have an oven. Had heard of the pot in pot cooking method but it was great to see it in action! I definitely will take inspiration from this video for trying things like lasagna in the instant pot. I have the air fryer lid so can easily broil the top cheese by just changing lids.

    Brilliant hack with rhe aquafaba. I use it all the time for all sorts of stuff but never would have thought of that
    I wonder if I could use aquafaba instead of oil in a magic shell to make frozen banana a tad more healthy.
    That book is one of my faves. I have many books too but I pretty much only cook on the weekends. I work ten hour days and am a solo empty nester so I have no shame in that. My fave recipe in there that I make all the time is the white bean stew. Her cheese sauce is also a staple as it is the best I have tried in my 7, almost 8 years vegan. I leave out the coconut cream though. It is fatty enough for me with only the cashews.

    Two cookbook suggestions for you to try…The While Foods Plant Based Cooking Show and Happy Healthy Vegan. Other recipes, Brand New Vegan. Chuck does not have a cookbook, but I’ve read his recipes are really delicious. Finally, another channel that does not have a cookbook, but I’d love to see you review some of Krocks in the Kitchen’s recipes.

    Usually love her recipes as well. Agree with some of your points here. I've made quite a few from that cookbook that were wonderful and from her blog. Every not and then have to tweak something for my family's tastes though for sure. Have not made a bunch from the book though because they are so long. Family favorites are the Game day black beans,the plain steel cut oats,take out tofu & broccoli, Mexican Pinto(upping the spices),Lentil Shepherd's pie, One-Pot Bolognese Pasta with some tweaks. Next cookbook review I'd love to see is The Vegan 8. Quite a few winners in there for my family. Both Brandi and Nisha are about to come out with 2nd cookbooks. Watching you from Florida.

He definitely deserves a shout out because he literally puts himself in danger In trying to show people that eating plant based is a healthy sustainable lifestyle.

    Hi, still watching from Berlin/Germany. Thanks for the detailed video, I don't have an instant pot, but I will definitely try the West African Peanut Stew. I love everything with peanuts…While you making the cheesecake, we can see lots of apples behind you, are they the ones from your own tree? (Remembering the post in the apple tree..)
