    Everyone's an expert…

Just because u lost weight doesn't mean your way is the only way or the healthy way.

A balanced, reasonable eating plan is best.

As a diabetic…I lost 45 pounds by eating a very fatty diet…no sugar, no carbs.

The minute I went back to my old way of eating…(food addict!) I gained it all back…but I was amazed at how much (healthy) fat I was eating (the right kind….not saturated, meat-based) and still losing weight…

So…I cringe when I hear "experts" give advice…fat…is…not…the…enemy.

Feeding to escape your feelings and not to fuel your body is the enemy. Period.

This is the very FIRST recipe I made after getting my Instant Pot about a month ago, and I loved it. Still enjoying it … just finished a big bowl full for dinner … thank you again, for sharing your recipes, your encouragement and inspiration, your knowledge and love. Bless you, sweet Heather!

If you cook white potatoes (and rice) with a small bit of oil and then refrigerate them for 24 hours, some of the starch converts to resistant starch that a human body can't metabolize so this process lowers the overall carb load, but the good gut flora consumes resistant starch, so you feed those guys. Beans generally have soluble fiber, like oats do, and those have different properties than regular carbs. Also, mixing beans with other plant sources like corn or wheat gives you almost all of the amino acids as in protein.

Just completed my first 30 days eating just like you!  Lost 7 lbs and I'm so thrilled.  I love my beans and instant pot and look forward to cooking up this wonderful looking soup.  I can almost smell it through my computer.  You are a very beautiful and generous soul.  Thank you.

Heather, made your potato salad today, it was the bomb!! I have a request, would you also state whether the recipe is "quick release" or slow for the Ipot?
my potatoes were still very hard and I had to redo them because I did a quick release on them. Thanks so much!! I'll definitely be preparing this bean recipe in the next couple of days!

Wow That is good! I made this today. I switched out the flavorings of the cumin and instead used thyme and some crushed red pepper. I had Great Northern white beans and I used the kale. It's fantastic. I just wanted to say thanks so much!
