    I own a condo in Puerto Vallarta and prior to the pandemic I lived there eight months a year for 5 years. I can tell you from vast experience that the rice is mostly cooked in chicken broth. Beans are also mostly cooked in chicken broth and usually include oil or lard. There is no such thing as no salt cooking and I am SOS free. Most vegetables and certainly a vegetable pizza will be cooked with some oil in it. Yes, when you’re on vacation, you do the best you can, but living there I just order salads without dressings when I go out to eat and ask them not to salt them. I bring my home cooked chick peas and use a squeeze of lime as a dressing. In a resort like you were in you might get a chef to cook more to your tastes but they really don’t know how to cook without oil (mostly anywhere, not just Mexico) and might tell you it’s oil free or vegan when it is not. There are more and more vegan restaurants and vegan dishes but they are not generally starch solution compliant. I find the same here in California.
