You mentioned -27 weather…was there a windchill as well? It was -39 here yesterday but -49 with the windchill. Today was -27 with the windchill and it felt downright tropical compared to the last week! Now it's snowing like crazy 😩 Have you tried the beyond meatball subs at Mr Sub? There are 2 flavors : plain and black bean tex mex, I think. I don't like the sauce on the ones at Subway so I get the plain at Mr Sub so I can put whatever sauce I want. Your stir fry looked delicious 👍

I'll definitely go with a 6 inch when I try the meatball sub. 1,000 calories is a lot at once. Well, if we ever actually get them where I live.
That stir-fry looks so good! I live in the middle of nowhere and have to drive over an hour to find baby bok choy or smoked tofu, so sadly, they are rarely on my menu. :'(

if you get the chance, A&W in BC or Ontario have vegan nuggets. They taste exactly like the yves ones though if you've ever had them. Gardein is better imo.
I guess I'm a weirdo because even though the english muffin and almond butter sounds bomb, I've been having it with grapefruit oil and apple slices. Somehow the sweet of the apple offsets the toasted flavor of the english muffin.

Maybe next time also mention vitamins you’re taking, which hopefully you are. As a fellow vegan I think it’s very important for an influential vegan to really make it clear that you really can’t get some things on a vegan diet, especially during the winter it gets harder to get certain micronutrients.
