I prefer leaving skins on the tator but to each his/her own. I've been making this dish for years so it's nice to see it isn't a lost dish.

I loved your video on this. My mom didn't have enough okra for a meal of 7 in our family. She diced potatoes and mixed those together and fried them. In my mix, I added onions and my family loved it. Doesn't take that long to make and is so delicious.

You keep picking out the big potatoes and you will end up peeling all small potatoes one day. lol This is one of my favorites. In the south we call them home fries but some people cut the potatoes into cubes. I prefer them the way you cut them. I also usually only season with salt and pepper but I always season by eye like you do.

Looks delicious! That is how I fix mine, except, I add more sliced onions. A big serving of fried potatoes and onions smothered with two over easy eggs makes a delicious, cheap meal. My husband and I love it, still. I admire your skillet. I used a large cast iron skillet that was passed down from my grandmother to my mother and now it's mine.
