I've been freezing celery for a good number of years and never blanch it. It isn't necessary.
You can also freeze peppers, tomatoes, chopped oinion and pumpkin without blanching.

I have a question a’ll? I have made the home vanilla with vanilla beams and rum. I didn’t realize I needed 80 proof. I have made and would l use it off course but it is not 80 proof. Will it be good?
All that bread and jam looks so delicious! Your friends are so lucky to have you! That salad looks delicious. My mom used to make a delicious cold salad in the summer, with chopped cucumbers and tomatoes, salt, pepper and dill weed. It is so good for hot summer days with some grilled or baked chicken wings!

Love watching you, however, you need to wear a microphone or something. Some of your videos are so soft I can't hear you even with my volume on the highest setting.

Don't bother blanching the celery, I just chop it, pop it in a baggie that I think is about 1 recipe's worth, and freeze it! 🙂

I save my veggie blanching liquid and make a soup that night. Lots of flavor after blanching several things too!
OH! Thanks for the reminder! My sourdough starter is at max happy, so it's time to make some bread to bulk ferment overnight. Should be ready to bake tomorrow afternoon and hopefully still warm for dinner.

I make a cucumber salad very similar to yours but instead of sour cream I use mayo, my grandma used to make this and it’s my favorite. I’ve also added fresh tomatoes to it as well. I’m going to try the sour cream recipe too see how I like it. BTW, I’m in Keizer Oregon so not too far from you. 😍
Becky I am so jealous of you. I am going to admit I had my doubts at the beginning of the season, but you have surpassed me. I live in Florida where we are supposed to be able to grow year around. The problem I have is the heat here wrecks our gardens and of course, the tropics bring in the bugs. In the little amount of time you can garden you have way surpassed me. Crazy!! You can grow so much and everything looks so beautiful.
