Maybe you could mention substitutes for the moire esoteric ingredients. In America, especially rural America, it is often impossible to obtain certain elements of your dishes. I think I would love this because my boyfriend and I cooked a curry last night that also use similar spices and veggies (onion, carrot, potato, peas) and a few other things we had on hand. I was too lazy to make rice though, so I just had an English muffin with it! Haha
Please, what was added to the yoghurt after the cumin? Was it a dried chickpea? Thank you.
This would be a good one for my wife who enjoys carrots in her sabji dishes, whereas I generally do not, save for ramen noodles, fried rice, and some Thai dishes. A bit can be OK in sambar, too. I would be very tempted to add the potatoes and beans with the first water and lid closure to ensure they cook sufficiently. I might go with pumpkin or other squash instead of carrot or a bit of both. Asparagus is plentiful now, or was a week or so ago, but it is not a great fit for desi khana though there are some recipes out there and of course it is grown in Kashmir and other parts of India.
