Maybe you could mention substitutes for the moire esoteric ingredients. In America, especially rural America, it is often impossible to obtain certain elements of your dishes. Also if you could SPELL the Indian spices and ingredients in the dropdown section it would make it easier to order them. Thank you. Love your channel.

My mouth is watering! Regarding frozen vegetables, unless you're lucky enough to be able to grow your own, or have a neighbour who'll share their's with you, there's nothing fresher than frozen veg.

I think I would love this because my boyfriend and I cooked a curry last night that also use similar spices and veggies (onion, carrot, potato, peas) and a few other things we had on hand. I was too lazy to make rice though, so I just had an English muffin with it! Haha

This would be a good one for my wife who enjoys carrots in her sabji dishes, whereas I generally do not, save for ramen noodles, fried rice, and some Thai dishes. A bit can be OK in sambar, too. I would be very tempted to add the potatoes and beans with the first water and lid closure to ensure they cook sufficiently. I might go with pumpkin or other squash instead of carrot or a bit of both. Asparagus is plentiful now, or was a week or so ago, but it is not a great fit for desi khana though there are some recipes out there and of course it is grown in Kashmir and other parts of India.

We live in northern πŸ‡¨πŸ‡¦ and we have 2 big summer gardens and a greenhouse. Right now we have a lot of winter veg stored in our root cellar. This dish will be perfect for using what we have grown, stored, and preserved. Thanks Chetna… I just love your channel. πŸŒŽπŸ’¦β“‚οΈaryβ˜ƒοΈ
