    – I’ve not tried this myself, but I wonder if it’d be possible to use pickled beets in an emergency? I’d definitely suggest rinsing them first to get off as much of the pickling brine away as possible

    – I did initially think about doing salt baked beets. Salt baking intensifies flavours. In the past, I didit by mixing salt into whipped egg whites, but that’s not vegan. I wasn’t sure if aquafaba would tolerate the salt, so I didn’t bother. I’ve just seen this web page with some info though, I’ll be trying in the future: https://chef.studio/salt-roasted-beets

    – Grain cooking times on packets are often wrong! I try to test things after 5 mins, and continue to try every couple of mins until tender

    – With the cheese tuile; you’ll see a lot of fat come out as it cooks down, just blot with paper towel after taking of the pan as it cools

    – For those wanting to avoid grains for whatever reason, grab yourself some tapioca pearls. I used them in the sabudana khichdi https://youtu.be/EHNJzpzCh9I
