    Meze Making with Yoghurt
     
    3 carrots, coarsely grated
1 celeriac, coarsely grated
    1 clove of garlic, mashed
    4-5 tablespoons savoury yoghurt
2 tablespoons tahini 
1 green apple, diced
    3 tablespoons extra virgin olive oil
    1 levelled teaspoon salt
    To garnish,
    Parsley leaves, chopped
    Extra virgin olive oil
    Roasted sesame seeds
     
    • Heat a medium frying pan over high heat and add 3 tablespoons of extra virgin olive oil.
    • Sauté the carrots and celeriac for 2 minutes and don’t stir at the first 2 minutes to let the veggies turn brown.
    • Cook for another 2 minutes and add the salt while stirring occasionally. Don’t stir too much and mash the carrots.
    • Transfer the veggies in a bowl and set aside to cool down slightly.
    • Meanwhile, whisk the yogurt, garlic puree, tahini and a pinch of salt until it's smooth and creamy.
    • Add the apple to yoghurt and mix the veggies with the yogurt and transfer them to a dish.
    • Drizzle with some extra virgin olive oil and sprinkle some parsley leaves. Enjoy!
     
    Stir Frying

    50 g sucuk,sliced as semi circles, sausage or minced meat would do great as well
    2 tablespoons olive oil
    A handful of pumpkin, sliced
    2 purple carrots, sliced, or beetroot, red cabbage
    1 red onion, cut into wedges
    2 handfuls of broccoli, chopped
    1 sweet red pepper, sliced
    Stale bread, cut into cubes
    1 teaspoon dried mint
    3 tablespoons savoury yogurt
    Red pepper flakes, to garnish
     
     
    · Sauté the sucuk with olive oil for 1 minute in a frying pan and transfer to a dish.
    · Do the same for pumpkins for a minute.
    · Add the carrots and onion and cook on high heat for a minute. Transfer a dish as well.
    · Sauté the broccoli and peppers as wel and put back all the veggies and sucuk into the pan again and sauté together for another minute. This way sucuk will give all of its spice to the vegetables and the taste will be incredible. Transfer to a dish and ready!
    · You can eat it like this, or you can add some stale bread on the pan and add 4-5 tablespoons of water and the mint. Deglaze all the flavours with water and you can make the delicious bread base for your veggies. Noodles or rice would be great with the stir fry as well.

    Thank you for sharing! With food prices rising world wide, these recipes will be lovely to prepare and enjoy. In South Africa we are currently experiencing electricity load-shedding (we have more demand for electricity than can be supplied) therefore we use gas in our household. It's just as expensive but at least we can cook our food and water for tea or coffee on gas. Thank you kindly, I always am looking forward to watching your newest videos. Take care. Be blessed 🙋

    Yes please for air fryer! Though I love my modern devices; I can generally do as much cooking the old fashioned way {minimum tech} as with a modern kitchen, so I can function in an old farm kitchen with no power or gas. When I was given an air fryer as a gift by my young nephew, I quickly discovered I had a little temp-controlled turbo-charged oven on my hands and it saves so much time in prep. So I would definitely love to see the Refika style approach to this interesting gadget.
