After watching this earlier this morning, I made it for my breakfast since I needed a change of pace, Way yummy, yummy. I don't have a rice cooker, so I made it in my Instant Pot – here's how I did it:
2 cups brown rice, rinsed
2.5 cups water
4 bouillon cubes
1 T whipped butter
salt and pepper
3 cups of cut veggies, carrots, onions, celery
Place all ingredients except vegetables into the IP, seal the lid and set for high pressure for 14 minutes.
Release pressure, open lid and add vegetables, set at high pressure for 6 minutes. Natural release.
If rice looks dry when you open the lid after 14 minutes, add 2T water with the vegetables.
This recipe rocks! I’ve always loved rice and this recipe is a hit with me. It pairs well with most anything and I now use this as my base for an easy fried rice. I just toss it in a sprayed, non stick skillet, add a few beaten eggs and finish off with light soy sauce. So yummy. Thanks for another REALLY good recipe🤗
how many servings is 3 pts? 1 cup? 1/2 cup?

Kim. What do you think about doing this in the insta pot? Would just cook it on the RICE setting or the MULTI GRAIN setting?
Always love your prep recipes…I can usually adapt them to our plant based eating. Trying our version of this in the instant pot today.
