    Nice recipe, Jamie – keep it up! Actually, there's no capsaicin (the hot defining factor) in the seeds themselves at all. It's only what has rubbed off from the pepper glands which have the highest concentration of capsaicin. If you were to wash it off from the seeds, there's no spiciness left anymore.

    As a Mexican chef and as someone who has worked in many mexican restaurants here in México, I can say that this is not Mexican at all, maybe inspired in Mexican food, but I've never seen anything like this here in México. For example, enchiladas are never made with flour tortillas, they're always made with corn tortillas.

    Jamie..I usually love ALL your recipes..but I'm from CA..USA..and buddy..that's not enchiladas..wrong cheese ,always use corn tortillas ..enchiladas sauce from scratch..use dry chili's..dry peppers 🌶 👌

    I was angry at first and then I realize that you can't get certain ingredients used for Mexican cuisine in the UK you can't get corn tortillas, you can't get Mexican cheeses like cotija and Oaxaca cheese, and you can't get certain type of chiles in the UK no jalapenos, serrano peppers, guajillo, pasilla, chipotle, arbol, and you can't get masa flour to make homemade corn tortillas. So I guess it's a okay compromise if you want to make a vegetarian enchilada in the UK and beans are a pretty good substitute if you don't want to use meat but the one thing Jamie should have done is toast the flour tortillas in a skillet for 30 seconds on each side since it softens the tortilla and makes it easier to roll while getting toasted and I would use low moisture mozzarella cheese since you can't find Oaxaca cheese in the UK mozzarella is a good substitute and I would use that instead of feta and use the feta as a topping while it's baking. Jamie's enchilada is okay but I'm always going to make my own enchiladas at home with corn tortillas, real Mexican cheeses, real chiles, and meat I use chicken when making it and I made both red (Tex Mex) and green (salsa Verde) I prefer salsa verde and I've seen traditional Mexican enchiladas which looks good but only for a made to order use not for a crowd like when you make the typical casserole enchilada that were used to making at home.
