    I made it today using black beans and all frozen veggies (that's what I had available)– corn, onions, bell peppers, and spinach. It feels good knowing that I can now make my own homemade enchilada sauce. Will make again. Thx for sharing!

    These look delicious. I'm already subbing the beans with baby bella mushrooms (I'm in a hate relationship with beans for the moment. One day I'll come back.) I can't wait to try!!! These are perfect, I needed a new way to eat spinach (my favorite green veggie). YUM
