    I'm glad I found this recipe but I'm leaving out those blow torch chilies you're using for a tamer version. Cayenne and Pablano are strong enough for my taste. I'll also add a little garam masala and turmeric to round out the flavor with an Indian spice palette. Thanks for the tip on removing the slime! I've only ever used ice baths prior to slicing and they aren't always effective. Okra with curry paired with dirty rice featuring sausage and beef tonight! This will be good!

    I am having a difficult time finding the pimento peppers. Are they green or red? None of the markets around me seem to know what I am talking about and keep directing me to the jarred red pimento peppers.

    Funny how different cultures eat the same things but like different aspects of it. In parts of Africa especially where I come from, the glutinous or slimy nature of okra is what is desired above all else. Thanks for sharing, I'll certainly try this as I love okra in all forms.Stella
