Russet tastes like "dirt". "Gold or red" diabetics can eat. I always brown meat/onion/garlic, then add tomatoes, bouillion, & hot water, bring to boil, simmer until meat is tender. 30-45min. The acid in tomatoes will tenderize an old shoe. Last, I add carrots 5 minutes before potatoes, remaining vegs, add spices (basil, whatever) the last 5 minutes.

Good recipe but I like to add a tablespoon of Worcester sauce and a minced clove of garlic to the beef marinade.
