    I am grasping at life and on a desperate measure I went to shrimp and scallops for nutrients. I made a fish and a vegan ceviche. I barely remember the seafood ceviche. The vegan one was amazing. So much more to it! I wanted more of that one, but I finished off the meat one to not waste it.. aghh. Then I wasn't sure about how long the other would keep.. meh. I am mistaking deliciousness anymore. Plants are not substitutes. They are exceptional and nutritionally dense too.

    I made your cilantro crema and put it with your meat from your crunchy wrap included this with your corn salad and it was mind blowing. I'm eating it now and am thoroughly amazed how something that isn't meat tastes juuuust like it. You're making it easy to go vegan.

    Wow, made the cauliflower tacos tonight and they're AMAZING!!! And this is coming from a picky eater who's not super into lime or cilantro… And who has never eaten cauliflower or jicama before. LOVED THESE! Thank you so much, Nisha, for sharing such recipes. You and other YouTubers are making my shift to veganism so easy! AND I'm actually broadening my palate!     Made the cauliflower and the double wrapped tacos tonight, WOW!!! My sister and I prepared them for my mom for her birthday, and she was complimenting the food the whole meal. Said it was the most satisfying meal she'd had in ages.     The first two double layered tacos were the bomb! Me and my wife loved them and oh by the way I used your black bean recipe. This one will be thrown into our rotation. I was skeptical of the cauliflower tacos but when I made them oh my goodness it was awesome I really loved them. Sorry I didn't add any pictures I was so excited that I ate them before I remembered to take a picture.

    Your recipes look amazing and make me want to cook more plant based. The only question I have is the oil. What can I use instead for the richness. In this video as well as the soup one I just watch you use the oil. Any suggestions?
