I have gotten some questions on the Nacho recipe so just wanted to share that here as well. We just did a pretty basic one, but used the queso from Target and some shredded cheese from Kroger (have the brands shown in the haul videos) I sautéd the Gardein crumbles first with spices (cumin, chili powder, garlic, onion) and then topped the chips with the cheese and meat and baked them for about 10 minutes (we don't put a ton of liquid cheese dip because they get soggy). Then we topped with more queso, sour cream substitute, avocado, salsa and hot sauce. We do olives and peppers on the side since not everyone likes them. The crumbles didn't stick as much I would have liked, so I will try a different brand next time, but overall they were so tasty!

Chickpea and lentil pasta can get very mushy if you even slightly overcook. I think the box recommends cooking for 7-9 min and if left in water for over that 9 min mark it will start to get too mushy. I’d drain around the 7 or 8 min mark to avoid the mushiness. Everything looks really great! Thanks for sharing. 🙂
