Jill, I just made this! OMG!! it's amazing! I usually don't use nuts but I decided to use the cashews and I am glad I did. the flavor is amazing. a great recipe. I will definitely make again. I used the Thai Kitchen noodles as I had some on hand. thank you for this great recipe

I knew something about veganism for a long time but I never really Incorporated it fully into my life until I got diagnosed with early-stage prostate cancer back in December. I have since then been getting my meals off of YouTube and some books. I really like the recipes on this channel. I usually have to do a little doubling or tripling the recipe in order to spread it out throughout the week seeing as I'm a truck driver who is gone 5 days a week.
I tripled all the ingredients for this recipe but I feel like something is missing this time around.
And by the way, if anyone knows anything about prostate cancer and PSA levels, my PSA levels are going down. I'm age 62, weighed 215 and now I'm down to 189.
