    I crave real Mexican food daily ,but unfortunately . I shouldn't have it daily . I know there are way's to make Mexican food healthier ,but I crave the unhealthy taste of "manteca" 😀 it makes the fried anything taste delicious. Have you tried Soy Chorizo for your Mexican food craving? This us how I cope and make a healthier choice . Love this stuff!

    No offense meant, I am seriously wondering what is Mexican about this, except maybe cumin and beans?! (I am European and familiar with Mexican food in Mexico) Apart from the cumin and taco seasoning, this is a lot like a veggie nut loaf or bean bake you would get in the UK or Ireland…

    Ooh, you know what could be good too? Instead of the potatoes, layer the "meat" mixture on the bottom of the pan and then do a cornbread layer on top (and skip the cashew sauce) and top it with your favorite toppings when it's done. I may have to play with this idea some, thanks for sharing! As for cravings…I don't think I really crave much from a region, I tend to crave breakfast foods. I swear that I could eat different types of breakfast foods the whole day.
