These would be great with less starchy potatoes like some of the more buttery or waxy potatoes like the baby or Yukon gold yellow potatoes, especially with the Dijon mustard.

This is fantastic! I made this for Christmas dinner last night for my husband and his family. It was a hit with even the non vegans. The only thing I did differently was saute some onions with my garlic. Excellent recipe.
