    ribollita is a recipe common in truly every single household here in italy. it is easy on the stomach, great for summer or winter, and can be extended for a very long time. it is something i make almost every week, but i make huge amounts of it when i know iโ€™m going to be very busy. i can literally eat it three times a day haha. i love cabbage <3

    ps i never use vegan meats or anything like that in this. i believe vegan Chef Nico (an Italian vegan yt chef) has a ribollita recipe where he blends half of the beans. that is how i do it. i like to top it with a tiny amount of cultured vegan butter and some hot sauce like a cayenne based sauce.

    donโ€™t forget to have a really well cooked seasonal soffritto to start with ๐Ÿ™‚

    I made a ribollita for the first time last fall by literally re-boiling leftover minestrone/vegetable soup with toasted bread. It was so thick you could eat it with a fork! ๐Ÿด And my philosophy is every season is soup season if you have AC ๐Ÿ™‚ ๐Ÿœ๐ŸŒบ๐ŸŒž๐Ÿ‚โ„

    Just a little tip re the olive oil: You shouldn't heat it up that high (not more than 338-356ยฐF), otherwise it starts to form toxins (you can look it up).

    Thanks for sharing this recipe & video Nicole. Is there a alternative to the vegan sausage because I prefer not to eat vegan sausage because I am trying to avoid oil because it is causing skin problems and most vegan meats contain oil. Love ๐Ÿฅฐ the video and love ๐Ÿ’•Nicole.
