Keeper recipe. Good with a generous amount of nutritional yeast and TJ's Chili/Lime Seasoning to finish. Would probably be good with frozen peas and corn. Maybe a bit of coconut milk for richness. Kind of like a pasta version of kitchri.

Do you think al dente whole wheat pasta can be cooked in the instant pot with a zero minute cooking time and a full natural release. I have to do a full natural release when cooking legumes or pasta because it's too messy with a quick release. Beans and lentils I don't have to worry about getting too soft, but pasta I hate when it's too soft. That's the only thing that I'm afraid to cook in the instant pot. Over the stove, I just have to boil it for 8-10 minutes and it comes out perfectly.

Vegans get more for their money. I just made a big pot of (organic) lentil soup which lasted me two days (ate it for lunch and dinner two days in a row). 5 Dollars! Look at what the omnivores are eating, grass fed beef? Good luck eating that for four meals for less than 30, not to mention the medical bills after the meat clogs your arteries. I'm about to spend the 25 dollars I saved on a leather glove to slap some sense into them.
