    Ranveer ji! Respect for you and your team. There is so much to unpack in this presentation!!!! For one, you filled a gap on YouTube… helping us make Korean dishes with available ingredients. Why is it a gap when so many YouTubers are creating videos on them you say. It is because your training as a chef gives us a scientific understanding of how the ingredients are going to interact with each other. Hence, we are not left with guessing which ingredients available in our kitchen are ideal alternatives. It gives us that control over determining how it is going to turn out. You also take on a journey into the trajectory of the dish or ingredients as well as the culture then and now. So it is not just theory+practical. It is a comprehensive collection drawn on from philosophy, science, history, culture and practicality. You are like that one favourite professor we all have who makes the class so interesting that we feel sad when the lecture ends… You are like the Freddie Mercury of cooking. Real good music, like the recipe or dish and the knowledge about it, but delivered in a casual laidback manner with theatrics that caramelizes everything into a blast of flavour/experience we never expected. Even if the dish may be a simple one (of course, you make the difficult ones also look simple), I feel I understand it better and it make me more confident cooking it.

    One more thing. You and your team are very sensitive when making dishes that belong to other cultures or sub-cultures. You are teaching young minds how respecting a different culture does not mean you are betraying your culture, but that you are secure enough in your culture that you can truly appreciate a culture for what it is…
