If you don’t have a banana, use frozen sweetcorn. I use vanilla extract as I’ve never seen vanilla powder sold anywhere. I use dates – you don’t have to be anal about blending them completely – I find the chewy bits taste like toffee, especially if I use a hard dry variety like deglet nour.
