    this way to cook chicken is call" 桶子雞" means bucket chicken

    and there are other way like 土窯雞 控窯雞 石窯雞

    they are much better thab normal roast chicken

    Btw I always keep that juice and freeze it to use later.
    When I fry noodles at home, i put some of the juice into the fried noodles. The taste is like professional cooking quality with that smoky taste. Just yummy.

    This is really good Taiwanese food that mostly locals eat, but most of the foreign tourists don’t know about.

    I think it’s simply the restaurants serving these kinds of chickens are in the outskirts of cities or in the countrysides that most foreigners don’t usually go.

    Cook that dripping stock down into a gravy and get some mash taters and buttered yeast rolls or biscuits and smash that Sunday dinner out.
    Or cook it down and make a nice spicy, savory bbq sauce… Shooooot.
    Some homemade Mac, greens, corn, fried cabbage or boiled cabbage, okra about three ways, purple Hull peas, habanero cheese cornbread, crowder peas, butter beans, fresh homegrown heirloom tomatoes, Noon Day onions, fresh habaneros/cayennes/jalapenos/ajis, pepper sauce, ice tea… Then you're eatin' GREAT. Dang I need to fast forward a couple months and get to cooking on that 😂

    The salt on plate must be a Formosan original magic salt that contains spices like glove or Chinese green peppers etc🧂. I love turnip cake of Taiwan.It's simple,soft and not powdery.🥢
