    She's being too forgiving about the store-bought ones. The canned curry pastes have PRESERVATIVES added (dangerous) plus they are usually in cans which are lined with BPA (again, super dangerous). Get a good granite mortar and pestle and make yourself, 100 times better that way, and no "surprises" if you buy good ingredients. And you don't NEED all the ingredients or the EXACT peppers, just the main ingredients. Mike's Curry Love is decent (and organic) if you have to buy curry paste.

But I’m extremely picky and out of 15 restaurants in neighboring cities I only like the taste from one Thai restaurant. ( Yupas, in Tempe AZ) Will you please post another video and tell us what the best yellow curry paste is for with mild spice level?

    Exactly what I needed to see as I plan to soon lose my virginity with cooking with thai curry paste; Thank you soooo much! I almost bought some yesterday but was overwhelmed with the different varieties & brands at the East Asian grocery store. I see a few recommendations for Mae Ploy (including the video) so I think I will start with their yellow because I'm veg. One thing not mentioned in the vid is what is the general difference between red, yellow, green, and any other types commonly found in stores. Also for storage, whereas they are in airtight plastic bags in the store on the shelf, wouldn't that work maybe if we keep it in the fridge?

    Mae Ploy and Maesri are my two favorite brands of curry paste, here. I find Thai Kitchen to be overrated and you pay more for the brand name than the product. I'm going to try tackling making my own even though all I have is a food processor. Guess I'll being processing the heck out of it!
