That does look good! I'm not familiar at all with Mexican food, but I don't doubt, this recipe is a winner.
I like that airfryer, btw. I already have one, so I'm not on the market…but man, I wish mine had a window!
Having to open it, to check for brownness, is the one thing I don't like about using it.

Have no idea why you would need this contraption, all of this can be done in an oven at the exact same temperature and time. Thanks for the recipe, looks delicious, will be using my simple old fashioned oven.

I have found with twice baked potatoes
    that letting them cool completely
    makes all the difference
They taste so much better when
they have cooled and the starches have changed
Put it this way – a baked potato in the morning
has avery different taste from those fresh from the oven.

I put my potatoes in the air fryer to follow along before the video even ended! Had my potatoI knew I had to try this 😄They came out better than I expected! I was amazed that leaving a bit of potato unscooped in the skin and double baking in the air fryer really did result in a texture similar to a fried samosa. I added diced onions and shredded vegan cheese to mine and I'll definitely be trying this air fryer twice-baked potato method with different mix-ins and seasonings. It's super filling too, two halves (one potato) ended up being a whole meal for me. If having as a side I would probably only need one half.

Genius sauce ingredient mix! I have been mixing Ginger People sweet chili sauce with tamarind puree, date syrup, and tamarind hot sauce but I'm going to try this asap. Looks outstanding. I also like to make samosa using Potapas tortillas as a shortcut wrapper, folding and pan searing them.

These look absolutely amazing!!! Definitely going to give this a try once my juice cleanse is finished. FYI…I tried the link above for the Kvyol AF600 on Amazon and it doesn't work. Maybe I have to wait until later in the day? I can't even find that brand on Amazon. Definitely going to order your cookbook though.
