3 cans hominy 8 oz Sour Cream 1 cup diced Velveeta cheese 1 med onion chopped 3 Tbls butter 1 sm can jalapeños saute onions. add rest of ingredients.

Diced green Chili’s are not as hot as jalapeños. You can buy mild or hot green Chili’s.

I love hominy but I have trouble finding it here where I live. I'd use the little 4 oz cans of mild green chilies instead of jalapenos.

I love hominy. We generally have it with Velveeta Cheese & just a tbsp of diced jalapeños. Cheesy & spicy but not too much. I have never had it with sour cream. That sounds MMMMMMM!
I love boiled, salted hominy in my ceviche. I would try this recipe but I'd only use 2 teaspoons of the canned jalapeño and drain it. Thank you for sharing.
I make something similar. I also add 4 oz cream cheese . Crisp up some bacon with the onion. Add parsley on top. I did not use jal., but will try next time. Blessings!

Not a hominy (because of the texture) fan, but I like grits. Truthfully, anything mixed with Velveeta and sour cream (thinking a baked dip) would be delicious. Thinking about your sweet Caroline and pray she's feeling better. Looking forward to seeing the rocked fireplace!
I believe that snack food called corn nuts is hominy drained, dried and deep fried…seems I may have made them before?! I will try this with a few tweaks! I have home canned pickled poblanos and a can of Ricos nacho cheese sauce that I may sub for the Velveeta (no need to melt it as it is already liquid).
I have always loved hominy….dump it in a saucepan and add salt and pepper and butter and heat it. Never ate it any other way!!

I think I’d use a can of mild Hatch Chiles. And maybe add some bacon??
My mom fixed hominy occasionally when I was growing up. She just drained it, put it in a skillet with a good amount of bacon grease and fried it a little. I still love it that way, somewhat like your sister with the butter. Not the healthiest, but yummy.

I would dice up some bacon,fry it up add garlic salt…then start the casserole.My family loves fried hominy and bacon.Great with fried eggs. You've got breakfast ❤️
U could use fresh jalapeños . They are not as hot if U take all the seeds out. It looks really good but I’m not a hominy person. Seems like I chew & chew but I just have a hard time swallowing it. Maybe it’s the texture lol

Maybe substitute a can of mild green chiles and add a few drops of hot sauce.
Instead of jalapeños use Rotella mild or diced canned mild chilies
Green Chile's instead jalapeños!
