🤯 I swore off the pressure cooker for meats because it was so chewy and dry. I thought it was just the pressure cooking method so I switched back to broiling and then stewing on the stove. Will definitely try this out next time I do a roast or braise. Thanks for the tip!
I think its the added cook time of sitting at high temp that makes the "slow release" more tender rather than the rate of pressure release.

Cooling the container has the exact same effect as quick release. It's rapid decompression either way.

Ummm… I'm using that 15-20 minutes. It's still hot enough to cook on there, you should be considering that part of the cook time.
If it’s that hot, won’t the plastic bag melt and adhere to the metal surface?

Or a stovetop pressure cooker – take it to the sink and run cold water on the top of it.
Just ditch the pot and learn to cook. It is not difficult.
Call me old-fashioned, but I still love my pressure cooker. I don't need all the bells and whistles that come with an instant pot.
