Another good way to stretch ground meat is TVP. 1 cup TVP, 1 cup boiling water and 1 tsp of boullion and you've doubled pound of ground meat. As a soy product is actuaaly increases the flavor of any dish.

I made this today for dinner and my family loved it!!
1. Fry some corn tortillas until crisp.
2. Pile some meat, salsa, lettuce, whatever you want on each one
3. Serve.

In my family we call them chalupas.
I know them as chalupas and any topping works for me, but bean and cheese are my favorite.
Exactly the way that I make them, except when I use the ground turkey, my store has ground turkey with taco seasoning already in it, and that's what I buy and use.

Wanted a tostada so bad that I stopped by Taco Bell. The girl had no idea what I was talking about. Uggg! That tells you how much I visit Taco Bell, like never, but I recently broke my back, and cooking is a bit of a hassle. Will have to wait till I'm better. 🙁
