your little girl reminds me so much of my kids… haha… it just made my day watching you all!!! I'm definitely going to have to give that vegetable medley a try… but I agree about the Brussel sprouts… that bacon and maple syrup one you made last time, I tried it and WOOOWWWW it was so good!!! I don't know that I'll want to eat it any other way! 🙂

The acorn squash looks awesome! I fix mine in a similar way, except I use butter, maple syrup (rub it around), a little salt, and garam masala, which is great on any root veggie or squash.

Love the real life reactions of your kids. Very typical! (Her reaction to mushrooms 😂). Our favorite veggies in the air fryer are potatoes, sweet potatoes, broccoli, Brussels sprouts and green beans. I need to try squash! Thank you!

Thank you! Oh, did I say thank you? I meant THANK YOU! 💖 🎉👏 I need to increase these types of veggies in my diet, following the Wahl's Protocol for autoimmune issues. You are my hero. 🤗 I'll be telling my MS warrior friends there's an actual yummy way to get all the veggies. Appreciate you!

A meat cleaver works great to cut hard squash in half. I use a large meat cleaver when I cut my spaghetti squash in half. Just keep all digits out of the way when you whack it!

Hi Cathy! We make brussels in our Cosori all the time. We do the olive oil, pepper and salt, too, and cook them just like yours. However, we love drizzling a mix of ranch dressing with some siracha or your fave hot sauce over them (or use a dip if heat is a problem). We LOVE them. Our other favorite is just a good ol' russet potato. I wash, dry, coat with a teensy bit of olive or avocado oil, rub in, and then kosher salt at 400 for about an hour if they're large. SO GOOD! I'll never use an oven for them again. A little crunch on the outside, and totally fluffy and creamy on the inside. I've become an air fryer freak thanks to you! What isn't better in one? 😉
