Assalamualikum
The process u followed is wrong, i am not a chef but i know a little bit.
1. After toothpick.
2. Boil water (only luke warm with what ever spices u want the water should not boil just kumkuma pani.
3. Dip the chicken with pricks for not more than 1 hr.
4. Remove the chicken then pat dry it.
5. Then apply u r dahi and what ever u want and try it.
In shah allah u will like it.

Nice effort sir. Few suggestions: whip dahi b4 use. Use a food thermometer ( costs around Rs. 500/-) to keep oil temperature around 160 Ć. God bless u
