    My tips for tom yum:
    – I find that frying up the shrimp shell and head first + squeezing the head so that the guts have time to caramelize, and then adding water/stock will give it a much deeper shrimp-y umami flavour and a beautiful orange colour!
    – Frying the aromatics at this stage (after caramelizing shrimp bits) also helps develop flavour by blooming it in oil.
    – Sugar (palm sugar if you have it) is an essential ingredient that will round out the strong sourness + spiciness of the soup.
    – Adding fresh lime during cooking will make it more bitter and less fresh/punchy – so definitely add lime (and half the fish sauce) after turning off the heat! ๐Ÿ˜€

I know it would be an extra step but, since a bit of it is inedible, could you maybe strain the stock before adding the mushrooms and everything else to it? This looks delicious and I want to try it but I don't know if I want to go fishing around for the mushrooms and shrimp haha

That soup looks AMAZING ๐Ÿฅฃ๐Ÿ”ฅ! I canโ€™t wait to try making it. I know o wonโ€™t be able to find those super duper huge Prawns but I can get some good extra jumbo ones. Your Mom is so beautiful , I can see where you get your looks from. She was so funny when Jacob told her the camera was running, ๐Ÿƒ๐Ÿผโ€โ™€๏ธ๐Ÿ’จshe ran outta there, lol. Love ๐Ÿ’–you videos . Canโ€™t wait for more recipes & vlogs from you.

I really like this dish. I tried it in several Thai food restaurants around here and they all had their own take on it, the only big thing they all had in common is that it was really hot & spicy ๐Ÿ˜€
